Wine Making:

Our Cabernet is picked at the peakof ripeness and brought to thewinery during early morninghours. I t is destemmed into stainlessfermenters where fermentation takesplace for 14 days. Wines are rackedand pressed off t o tanks where w eput them down t o 50% New FrenchOak.

Flavor Profile:

Colors of dark purple and garnet.Aromas o f blackberry, ripe redfruits and sweet oak. Flavors ofmocha powder, spice and darkfruits.

Appellation Notes:

In the Mayacamas mountain range-whichdivides Sonoma County from the NapaValley. California's top heritage clonevines have their roots in this vineyard,prized for the volcanic influence andmineral content o f its iron-rich, loamy soil.
