Our Cabernet is picked a t the peakof ripeness and brought to thewinery during early morninghours. It is destemmed into stainlessfermenters where fermentation takesplace for 14 days. Wines are rackedand pressed off to tanks where w eput them down to 50% New FrenchOak.

Flavor Profile:

Colors o f dark black andred hues, aromas o fblackberries and ripe cherry,sweet oak and cocoa powder.Flavors of ripe blackberrypie and cassis, mochapowder and spice.

Appellation Notes:

Napa Valley's location on the San PabloBay causes an induction effect at nightthat delivers morning cloud cover. Perfectfor Cabernet Sauvignon so that the grapesripen slowly.
