Wine Making:

Our Cabernet is picked a t the peakof ripeness and brought to thewinery during early morninghours. It is destemmed into stainlessfermenters where fermentation takesplace for 14 days. Wines are rackedand pressed off to tanks where w eput them down to 50% New FrenchOak.

Flavor Profile:

This wine showcases aromaso f dried cranberry, cherry andmocha spice from the FrenchOak barrels it's been aging in.Flavors of rich dark fruits,baking spice and sweet oak leadt o a long and lingering finish.

Appellation Notes:

These grapes were picked from primeterroir where the elevation is high andvolcanic soils let off aromas of dried redfruit. Red Hill's pure air allows for greaterlevels o f UV light, as much as 10% morethan neighboring sea level valleys.
